What sweater vest guy left out was that you have to thoroughly marinate the chicken leg in lime juice* before adding it to the soup. Salt and pepper to taste goes without mentioning. * An acid bath serves to denature the protein, i.e. 'cooks' it. "When a protein is denatured, secondary and tertiary structures are altered but the peptide bonds of the primary structure between the amino acids are left intact."
