Escorts are all on the net now.firecat69 has given good advice. I have seen escorts in Paris bars and clubs but they were socialising, not working. You would have to hire online and then go to a club. You will not find any (but you will find places to cruise (see on Spartacus or squirt.org) - not the best places nor the best boys, but some people like these places.
