Well summer is in full swing and some of us get tired of eatting Meat (I mean burgers and hotdogs). So I have a quick and easy recipe, that's healthy too. I call it "Pina-colada Shrimp". Serve with brown rice, couscous or Quinoa and a cool, crispy green salad. 1+ lb raw shrimp, cleaned and deveined 1 can Goya coconut milk 1 can crushed pineapple with juice Marinate shrimp in 1/2 can coconut milk and 1/2 can crushed pineapple for at least 1-2 hrs.
